As far as i know, despite in-game description "Fight with light weapons", you can train dexterity only with weapons with high DEX to STR ratio, which make katanas best weapon class to train Dexterity. I recommend you take out whatever bandits you can around the area and slowly attack better armed groups to get better weapons. Another strategy is to search in ruins for the odd weapon you can find there.So weapons that have only cut damage (Katanas, some sabres) only get more damage from your DEX stat, weapons with a mix of damage get more damage from both STR and DEX. So basically DEX makes you faster but you need to be strong enough to hold the weapon.
